Sauce of the Day: Prosciutto & Butter Pasta Sauce

Prosciutto
The simplicity of this sauce makes it one of my favorites. The fact that it’s quick, easy, and made of butter and meat doesn’t hurt either!

The butter is slightly sweet which marries well with the saltiness of prosciutto. I’m anti-margarine but if you’re calorie-conscious, you can save 25 calories per tablespoon and use Smart Balance butter (but not the spread).

Ingredients
4 Tbsp unsalted butter
6 slices prosciutto, diced
Freshly ground black pepper

Melt butter over medium heat and add prosciutto. Cook until the prosciutto just starts to crisp and turn brown around the edges. Toss over cooked and drained pasta, hit with a few grinds of black pepper, and enjoy.
