Buttermilk Pancakes

Buttermilk Pancakes

That is how my husband eats his pancakes. With a fried egg on top. I think it is the weirdest thing in the world, but I’m really not one to throw the word “weird” around, ‘specially when you see my favorite breakfast. Trying to rationalize his breakfast habits is as difficult as trying to convince someone that chocolate gravy really is good.

Buttermilk Pancakes

I tend to get into cooking ruts, but not for lack of ideas. Or lack of cookbooks. Our problem is that when we find something we like, we want it again and again. And again. Finally we hit burn out and someone [cough] my husband [cough] cries, “Uncle!” Or more accurately, when my husband tells me that he’ll be sick if he has to even think about one more potsticker.

How the ‘burn-out’ rut hasn’t yet victimized buttermilk pancakes, I’ll never know.

My husband ate homemade buttermilk pancakes nearly every morning for weeks. Months. He’s spoiled and I have no one to blame but myself 🙂 I was lusting over a griddle pan at the shiny, expensive kitchen store in the mall (you know the one) and like the genius that he is, he used it to his advantage.

Somehow I managed to sneak out from under pancake duty and I never looked back… until he hit me with a guilt-laden “I can’t remember the last time you made pancakes. Hey, remember when you used to cook breakfast for me?”

Okay, I get it. I get it. Guilt trips. They aren’t just for women anymore 🙂

Buttermilk Pancakes

This is my favorite recipe for buttermilk pancakes. They’re one of the few things in life that are fantastic plain. However, if you have a mound of fresh blueberries or raspberries just hanging around, I can tell you where you can put ’em.

In the pancake batter. (Of course.)

Buttermilk pancakes

The addition of buttermilk makes light and fluffy pancakes.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup butter, melted and cooled

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. Sift together dry ingredients in medium bowl.
  3. Beat the eggs, buttermilk and melted butter together. Whisk the dry and the wet ingredients - batter will be lumpy, do not over-mix.
  4. Ladle 1/3 cup of batter onto the skillet (1/2 cup for larger pancakes) and cook until the bubbles pop and the top of the pancake loses the "wet look" (about 2-3 minutes).
  5. Flip and cook 1-2 minutes more.
  6. Top the stack of pancakes with a pat of butter (or a fried egg) and serve with syrup.

Yea! I do have buttermilk in the fridge and have been craving pancakes, ever since I made strawberry syrup a few days ago.

And I understand the egg on top–I’ve done it and it’s quite yummy. Especially if you have a sausage or crispy bacon on the side that catches some syrup.

  • Lovely pancakes, but hold the egg for me, yeugh! I am not a morning person, so my husband will never get this kind of breakfast, except on a Sunday sometimes.

  • I think everyone has a strange breakfast love.

Do you have a recipe for chocolate gravy?? I had it once at a friend’s house and loved it, but haven’t found a recipe for it.

  • Yum! Yum! Yum! you have me salivating! Now all I want is a big stack of fluffy pancakes:) (but minus the egg on top…I do eat grape jelly with my scrambled eggs though and that is weird too)

  • Your pancakes look perfect and fluffy. The kind I love and the husband hates.

  • Yummy! I guess I can be classified as a weirdo with your husband, as I also love a fried egg with my pancakes. I, however, prefer to put it in between the stack!

  • wow this recipe is asoloutely fantastic and I adore buttermilik so I’ll take a note..;-) and hope to be as good as you are in preparing these stun pancakes! ..lucky man your husband!

  • What a fun topping for pancakes! I’ll have to try it sometime as it does make perfect sense 🙂 Your pancakes look beautifully fluffy, the way they should be… and you’ve got me craving them now!

  • My husband eats his pancakes the same way.

So you think this recipe would work well for waffles?

  • OMG I love to put the egg on top of my pancake too and pour syrup all over. YUMMY!

  • Kitty – I’m not sure, I’ve never made homemade waffles before.

Hi. I just got sent to your chocolate gravy page from Lisa at Homesick Texan. 🙂 How do you get your pancakes to look so perfect? My buttermilk pancakes are delicious and fluffy, but after I put them on the plate to stack, they get wrinkled and funny looking. Plus, they are always mounded more in the center. Your’s look uniform and beautiful, as well as appetizing. Also, I agree that pancakes need more sugar. I added 1/4 cup to my cookbook’s recipe for buttermilk pancakes, which only called for 1-2 tbs. And my mom LOVES blueberry pancakes. Have you ever tried chocolate chips or butterscotch chips in them instead? We used to get those as kids, especially me because I wasn’t a fan of pancakes. I like them now, especially with fruit in them. I think blackberry ones are so good!

By far the best buttermilk pancake recipe ever. I can see (or should I say taste) why these are requested over and over. Delicious.
