This was the perfect recipe for this week. I’ve been so busy getting ready for a smash-and-grab trip to Indianapolis and wrapping up as much of my Christmas baking (and presents!) as early as possible that I needed a quick and easy dish. The recipe required me to use nothing more than a handful of ingredients, a bowl, a wooden spoon, and a bottle of your favorite beer to add to the batter – and an extra one to drink
Favorite being key here. I actually thought all beer flavor would be lost after nearly an hour in the oven but I was wrong. I used an IPA and could really taste and smell the hops in the finished product. A little more than I wanted to but it mellowed out by day #2 and was great warmed with butter. I should have just grabbed a glass of the honey wheat we have on tap in the garage and left the IPA for my husband to drink
I threw in half a log of goat cheese and some chives from the garden for a little variety. I can’t wait to try it with a Shiner and some fresh jalapenos and cheddar!
