I’m supposed to have a Project Pastry Queen challenge to show you today (um, or tomorrow 😳 ). But I don’t. The rest of the group baked up King Ranch Chicken Casserole with Jody this week. But when it came time to gather the ingredients, I just couldn’t pull the trigger. I couldn’t tackle comfort food with a 99-degree high and two 100-degree days on the forecast.
I can’t wait until it’s cool enough to go back and tackle the King Ranch Chicken and make hearty, warm comfort foods for dinner. But what I’m really looking forward to is pumpkin! Pancakes, bread, and cake rolls. Ravioli, bread pudding, and french toast. Pumpkin anything and everything!

I’m in denial about fall coming this year. I think it’s because winter in Boston was SO BRUTAL this year. I figure mother nature owes me a few more days of summer. And I LOVE fall. All the baking, the food, the football. It’s definitely my favorite season. But I’m not doing any fall baking until October 1st. I’m being stubborn. If I had to choose one thing to be excited about, it’s the fall baking. But like I said, that’s not happening in my house for a few more weeks.
Ooooh goodness I am really looking forward to thick, hearty soups. And tailgating food!! 🙂

My first choice is always PUMPKIN! But since you already said pumpkin, I’ll say that my second choice is roasted root vegetables – I love the simplicity of roasted turnips, parsnips, butternut squash, and onions. Just toss with oil, salt and pepper and roast. Done! It personifies autumn and winter!

Anything that has both cinnamon and apple flavors like a crisp or tart is always a must have during the fall for me. As well as anything with pumpkin. I just can’t get enough of it. I already started fall baking which for me includes Reese’s pieces cookies because those scream fall as well.
