I’ve been waiting for this day for over 2 years. Literally! In the fall of 2009, I had the pleasure of testing recipes for Lisa Fain’s cookbook, The Homesick Texan, one of my very favorite blogs, turned cookbook. And just shy of two weeks ago, a copy showed up in my mailbox. Christmas in September. With a high over 100. Typical, Texas.
I must admit, I am a recovering cookbook addict. A year ago, I had shelves and shelves full of cookbooks. Our first home in Houston was built in the early 70’s and had several built-in cookbook shelves. It had history and character. And the world’s ugliest smokey mirrored-walled wet bar. But did I mention all the bookshelves?
Our new home in the suburbs was built 10 years ago and has four walls. And ceilings. And that’s about it. We have far less book storage so only the very, very best and most used get to stay. And this book is one of those.
In southeast Texas, we have an absolutely wonderful mish-mash of cultures – a little Cajun, a little East Texas, amazingly fresh seafood from the Gulf, a little influence from the Hill Country, and a lot of influence from Mexico. And The Homesick Texan Cookbook celebrates all of it, from kolache to pork tacos, from chocolate pie to queso flameado. Each turn of the page brought a bigger and bigger smile. Lisa may live in a big city up north now, but her book does Texas and our foods proud.

Houston-Style Green Salsa
Tomatillos and avocado make a creamy, tangy salsa familiar to fans of Houston's Tex-Mex scene.
Ingredients
- 3/4 lb fresh tomatillos (~4) or 11 oz canned tomatillos, drained
- 1 large avocado
- 3 cloves garlic
- 1-2 serrano peppers, seeds removed (or left in!)
- Juice of 1/2 a lime
- 1/4 cup cilantro
- Salt
Instructions
- If using fresh tomatillos, remove the husks drop them whole into a pot of boiling water for 5 minutes to soften. Using a slotted spoon or tongs, transfer them from the pot to the blender.
- Remove the pit and scoop out the avocado and add it to the blender along with the garlic, peppers, and lime juice.
- Blend until you reach desired consistency.
- Add cilantro and a pinch of salt, pulsing once or twice to combine.
- Leftovers will keep several days in the fridge.

Yields: ~2 cups

My favorite is a chimichanga. Can you go wrong with that deep fried goodness with a dollop of sour cream and guacamole on top? No.
Chili rellenos are a close second!

I don’t know if this is considered Tex-Mex, but we lived in Texas for about a year and I got hooked on Red Beans and Rice with smoke sausage. I love Mexican Rice too.
My favorite is more like a trio that is a must have every time I eat Tex-Mex….chips, queso, & salsa! I can’t get enough of them!!!

Texas Chili and Cornbread!!
True Texas chili! To me this means no beans and surprising to some no tomatoes. A very close runner up is cheese enchiladas.
On of the local places near where I went to school serves a cheese and avocado enchilada lightly covered in mole sauce and sour cream. Holy cow is it good!
I love all things Tex-Mex or Mexican but my favorites would have to be enchiladas, empanadas and queso. Yummm
I love me some “nasty nachos” … you know the kind, a plate full of chips with ALL the toppings. Yum.
Every time I hear the term “tex mex” I think how good it sounds, but I never really know what it entails. My mind just goes to tacos and burritos, but then, where’s the Tex? If I win, I’ll definitely be expanding my knowledge! Going by my admittedly poor knowledge of tex mex foods, I’d have to say my favorite that I’ve had so far would be a classic veggie burrito – spicy if possible!

I am from San Antonio and currently reside in Houston and my favorite Mexican/Tex-Mex food is Tortillas and Salsa. I love trying to recreate my great-grandmothers recipes!!

Chips and salsa
This salsa looks delicious! To me, there’s nothing better than a good burrito with chicken, beans, and salsa.
I can never resist a quesadilla, though chips and salsa are a close second. I don’t know what chow chow is either…
Queso! It is something that I had never had until we moved to Austin. Now that we are back in Seattle, I have not been able to find a place that serves it.
I love it all, but really, my favorite? The white dip from Chuy’s. I know. But I sure do miss Houston, especially the Montrose area where I went to school.

I love mole. Anything with mole sauce drizzled over it is amazing. It’s such a pain to make, so it’s a rare treat!
Fajitas and guacamole are my 2 most fave Mexican foods! I could eat these just about everyday and not get tired of either one.
As an aside, I also love chow chow on my pinto beans! I grew up eating it and I still love it. π

I taught myself to hand-make corn tortillas while living in Corpus Christi, TX, and eventually bought an antique tortilla press and comal for traditional cooking. Those were some of the best gifts I gave to my fiancee and myself — prep and food-wise!

I love Tex-Mex food! Since I have to pick one I would have to say enchiladas. It is what I try at every new tex-mex restaurant as my “standard”. I really want to try using tomatillos and this looks like a great recipe for my first time!
i live on the coast in southern california…we have a lot of mexican, a lot of seafood and A LOT of avocados. so, add any of those together and i am a happy girl. fish tacos, ceviche, fresh salsa and a bowl full of guac!!!!

I love the beef fajitas at Lupe Tortilla! Add in some queso, chips, and a strawberry margarita, and I would be in heaven. We moved from Houston to Atlanta 5 years ago, and have yet to find a Tex-Mex restaurant with good food AND margaritas….
I’m always confused on what’s considered Tex-Mex food and what’s considered New Mexican food. But I like any sort of mesh of beans, meat, cheese, avocado, and tortillas.

What Tex-Mex-Etc. food DON’T I love? I make some pretty mean enchiladas…at least I think that’s what they’re called, but technically, who knows. Those paired with homemade guac and salsa = heaven. And don’t forget the jalapenos!

This is entirely too hard for me! I guess if I’m pinned down I’ll choose fajitas, only because it’s a meal that allows little pieces of all my mexican favorites – beans, cheese, guac, salsa, tortillas, and whatever sauces I can rip off neighboring plates. I also adore all things tomatillo!
Right at this moment I would have to say salsa and fresh, warm chips. Any salsa will do! Tomorrow I may say black beans and rice with a little cheese wrapped in a corn torilla!
Can’t say that I’ve had authentic Tex-Mex or Texan food, but a plate of carne asada, rice, beans and homemade tortillas with queso fresco, salsa and guacamole sounds like a tasty Mexican feast often served in my backyard for get togethers–not to mention caramel flan for dessert. Mmmm.

I think I have to go with Pollo Fundido, a dish made by a restaurant back home (in PA) by a Peruvian guy who studied cuisine in Mexico…it’s AMAZING! Seasoned chicken breast and monterrey jack cheese wrapped in a tortilla, grilled so the cheese is melty deliciousness, then topped with a sour cream-cheese sauce that is DIVINE. Sounds simple, but it’s a culinary delight!
I am just in love with arroz con pollo. I love how it’s made a little differently everywhere I go, and it’s always delicious!
Fajits! With the butter sauce like at Pappasitos! Oohhh and with some fresh pico! And a margarita of course π

i think it’s hard to go wrong with some delicious beef enchiladas!
Gosh – having to think about this right before lunchtime is making my stomach growl! Though I love rellenos, enchiladas, salsa (eating cups at a time), quesadillas, and green chili, I’d have to pick guacamole as my favorite!! It just goes with/on everything and tastes deliciuos always- especially when left to sit overnight (but it usually doesn’t make it that long)!

Queso! From Kerbey Lane’s to-die-for guac and salsa infused Kerbey Queso to Chuy’s happy hour bar queso, to a homemade white and yellow cheese fusion, there seems to be endless ways to interpret melted cheese. And don’t get me started on the tortilla chips.
Migas. As soon as I moved to Austin, I discovered migas and fell in love. I then found Homesick Texan’s blog when I needed a recipe to send to the Yankees who had never tried such a delight. Yee ha!

I love love love Mexican chorizo. Sautee with grated potatoes or scrambled with eggs, wrapped in a warm corn tortilla, sprinkled with some cilantro and a squeeze of lime — divine!
Tough call…but cheesy, saucy, spicy enchiladas (rolled, stacked, thrown-together-half-assed in a casserole, whatever) are an ultimate comfort food.
I’ve lived in Texas for only two years now, but have become a huge fan all things Tex-Mex. Carne Guisada, enchiladas suizas, queso (Torchy’s is by far the best) and fresh tortillas. Yum!
Gosh…such a hard question! We just moved to Texas a few months ago and I am in love with trying every Tex-Mex, Mexican, and related food that I can get my hands on! π Really though…I just have to still love the basic taco…I’ve had some great ones here! But fresh churros are pretty great too! π

Tex Mex is a staple in my diet. Like one of my basic food groups. How to choose just one?? I’d say it’s between stuffed avacados, carne guisada, and tacos!

I could eat Mexican food everyday – in fact, there was a time in my life when I did. We officed across the street from Austin’s Las Manitas (man, i miss that restaurant) and went there for lunch almost every day. Walk through the kitchen, out onto the back patio – limonada and a gordita – heaven. But Queso – the trashy kind made from Velveeta and RoTel tomatoes – is my crack.
I think I could eat refried beans with cheese every day of my life. YUM.

Oh gosh, how could I decide? But of the things I miss the most about Mexican food in Tennessee vs. Tex-Mex it’s the refried beans.

Tamales, hands down. I want to learn how to make these, but it’s an all day thing. π I can only get them in restaurants here in Maryland, but it’s not the same when eating them in TX.

I lived in Northern California for 8 years and I missed Tex Mex so much. Every visit home (Houston) I HAD to trek to Casa Ole for their queso dip. OMG, it is so good it hurts. I missed really good enchiladas and … mmm … sopapillas. Ok…I’m drooling now. Thanks for sharing!!!
i love almost all mexican food, my favorites would be fresh home made salsa, and guacamole with a nice sprinkling of cilantro. i do love Mexican beer π

oh my gosh, where to start?! Nothing beats a great queso (Matt’s Bob Armstrong in Dallas, Maudie’s in Austin) but then there are perfectly crunchy flautas (Rafa’s in Dallas) or fajitas with potato slices (Mi Cocina). Basically nothing beats Tex-Mex!!!

I would have to say the best Mexican food I had was in a small restaurant (and by small, I mean it was in their living room). They had the best guacamole I have ever tasted. Ever since, I’ve been on the quest for that level of greatness. Oh, that and baja style fish tacos – I love them!

My favorite are tamales. My grandmother lived in San Antonio, and getting tamales down there was always such a treat. One year my aunt ordered tamales for the day after Thanksgiving…and had them shipped overnight to Virginia. Heaven.
As a daughter of Houston who’s been replanted north, I certainly fall into “Homesick Texan” category. I miss going to any grocery store and grabbing a jar of “Hell on the Red Party Dip.”

How in the world do I choose just one? Seriously…hardest question I’ve had to ponder in a while. (I actually read this yesterday and have been thinking about my answer since then.) I’m going to go with guacamole made with healthy doses of onion, garlic, lime, salt, tomato, and chipotle peppers.
Really good sausage (typically from Elgin, Tx) with potato salad, or pigs in the blanket with jalapenos and cheese.
How can I narrow down to just one favorite? What I get depends on where I’m ordering. At home, I make chimichangas, enchiladas, and fajitas. What I need is a good refried bean recipe to go with your amazing tortilla recipe.

I am a Homesick Texan! (Living in Alabama) …and I love ALL foods Mexican- or Tex-Mex. Enchiladas Verdes or Fish Tacos are two of my favorites. Of course paired with tons of salsa!
I’ve been making roasted tomato and jalapeno salsa lately (lots of garden fresh produce) and it has moved to the top of my list although a close second would be fish tacos! This book looks fantastic!
I love restaurant chips and salsa. My husband and I have tried every store bought salsa and nothing came close. I now pick up a pint one or two times a week from our favorite restaurant. I have the list of ingredients and all of them ready to go. I may have to try this recipe as well.

My favorite has got to be a big bowl of queso! I moved from Houston to Washington, DC a few years ago and they just can’t do it like the Texans can! I miss it terribly!

When I lived in Texas I didn’t fully appreciate the wonderful foods I ate on a daily basis, but now that I have moved far, far away, I would say that my favorite Tex-mex food is definitely enchiladas!

I love blue corn enchiladas! I would just say enchiladas but I like the cool look of the blue corn.
I’m gonna have to go with either Gorditas or Carnitas with fresh corn tortillas and chile (salsa), makes me miss home, El Paso!

Mexican Food is by far my most often go to meal. I craved chips and salsa the whole time I was pregnant. I swear my four children have salsa running through their veins!
Ahhh, how to choose! Probably for a meal I’d have to go with Texan Chili, but homemade guacamole is seriously amazing. Like as in I have a problem when I’m eating it. To the point where I require an intervention (or an empty bowl) in order to stop.

Quesadilla especial. I grew up near the Mexico border and they make them there. I can’t find them anywhere else! It is basically, a deep fried quesadilla!!
Enchiladas suiza are my favorite. I love them! But just about anything involving cheese and beans hits the top of my list too.
I have to go with enchiladas – good, authentic enchiladas. Not those made with canned sauce, but ones made with love from stock and dried chiles, homemade tortillas and cheese – lots of cheese.
