Grilled Pineapple Guacamole

Guacamole is one of those foods that doesn’t really need anything fancy to make it more exciting. You can smash some lime and salt with a perfectly ripe avocado half and call it a day. But I like the crunch of red onion and jalapeno. And there’s no such thing as too much cilantro!

But that doesn’t mean we can’t throw in something fancy 🙂

Grilled Pineapple Guacamole

This idea for this guacamole was born on burger night. The avocado and pineapple paired really well together on a burger, so we took it one step further. We started with our usual guacamole, but left out the tomatoes. Then we added a couple of diced pineapple rings that we’d nicely browned on the grill.

Each bite had creamy avocado, tangy lime juice, and crunch from the peppers and onions. But the best part – a burst of super sweet, smokey pineapple. We ate it with chips. We put it on top of shredded pork tacos.

And then we rearranged our dinner menu for the week just so we could make it again the very next night.

Grilled Pineapple Guacamole

Creamy guacamole studded with sweet, smokey pineapple chunks

Ingredients

  • 2 large avocados
  • Juice of 1 lime
  • Salt
  • 1/3 cup finely diced red onion
  • Small handful of cilantro
  • 1-2 serrano peppers, seeds removed and finely diced
  • 2 pineapple rings ~1/2-inch thick, core removed
  • Olive oil or cooking spray

Instructions

  1. Preheat grill to high.
  2. Spray or brush both sides of the pineapple rings with olive oil or cooking spray.
  3. Grill 4 minutes on each side, until nicely browned.
  4. Remove from the grill and set aside to cool to room temp.
  5. Cut the pineapple into small cubes.
  6. Remove the pit and scoop the avocado from its shell.
  7. Add lime and salt, and then lightly smash with a fork.
  8. Stir in onion, cilantro, peppers, and pineapple cubes.
  9. Serve with tortilla chips or as a taco topping.

  • holy moly what an awesome new twist on guac! I think grilled pineapple is the MOST AMAZING thing, ever, since my friend introduced me to its caramelized goodness last year. Now I always bring pineapples to barbecues so my friends and i can enjoy them together! I think we’re definitely going to have to try adding them to guac now… this just looks TOO good to resist 🙂

    What a great idea! I am the only Guacamole eater in my house which means more for me! I am sure the friends that like it will love this recipe! What’s not to like? Unfortunately the only problem my friends will have is the onions. That’s ok, I will make it for myself! It is so easy, why not?

    The last few times I have made guacamole I have added paprika. It is great too! I am always trying to find a way to add anti-oxidents to my food! Paprika is a way to do that with a lot of foods we normally do not use paprika on.
