Grouper with Garlic-Lemon Butter Sauce

I love daylight savings – it’s still daylight at supper time! With a 7 week old, I don’t even miss that hour of sleep. With a 7 week old, I also don’t have loads of free time to hang out and play in the kitchen. Or do laundry. Or wear matching socks, apparently.

If it’s not quick and easy, I don’t really have time to do it. So I do what I can to make dinner as painless as possible. That usually means building dinner around a prepared freezer entree or pantry staples.

Grouper with Garlic-Lemon Butter Sauce

Dinner was supposed to be reminiscent of a dish my husband had out several months ago – seared white fish topped with tomatoes and basil and a creamy butter sauce. I didn’t quite nail the restaurant dish – I stayed away from the heavy cream – but I did manage to put a fresh and easy dinner on the table in a short time.

Grouper with Garlic-Lemon Butter Sauce

Grouper with Garlic-Lemon Butter Sauce. A simple and delicious fish and pasta dish.

Ingredients

  • 3/4 cup orzo
  • 2 6oz filets of your favorite fish (grouper was on sale)
  • 3 Tbsp butter, divided
  • Sea salt
  • Black pepper
  • 1 tsp flour
  • 1 clove garlic, minced
  • 1/4 cup white wine
  • 2 tsp lemon juice
  • 1 Roma tomato, diced
  • 1 Tbsp basil, chiffonade

Instructions

  1. Bring a pot of salted water to boil and cook orzo according to package directions, drain.
  2. While the orzo is cooking, heat 2 Tbsp butter in a pan over med-high heat. Salt and pepper both sides of the fish and place in the pan. Cook 3-4 minutes on each side, until fish is cooked through and seared nicely.
  3. In a small sauce pan, heat remaining 1 Tbsp butter over med-high heat. Add garlic and stir until fragrant. Stir in flour and cook for an extra minute. Add white wine and lemon juice, whisking until smooth. Remove from heat.
  4. Divide orzo between two plates or bowls. Serve fish over orzo, topped with chopped tomato, basil, and sauce.

  • gosh i haven’ made grouper in ages, no decades? hmm. this sounds good and no crash and burn later w/ a meal like this one.
p.s. glad you loved those giant cc cookies. those are my favorites; rarely do they last 1/2 day in this house.

  • Sometimes the quickest and easiest dinners are the best. This looks quite refreshing. I love that the simpleness of the ingredients really lets the vibrancy of the flavors shine through.

  • A perfect and light dish for a spring day! This is lovely.

  • Such appetizing photos! Yum. I should try pairing my fish with orzo next time.

  • Looks delish! Good job on keeping the blog up with a newborn, by the way. Way to go, mama! 🙂

  • I actually look foward to the spring forward daylights savings because the kids don’t know the difference yet. I go to bed at the new time but they still wake up on the old, so I get an extra hour of sleep 🙂

A brilliantly simple dish, although with my sons’ fish allergy, I’ll try it out on chicken and let you know 🙂

  • This looks really yummy. I can’t wait to make it!

  • I actually like daylight saving time because I like waking up when it’s still dark, and I greatly appreciate the extra light in the evening!

This dish looks incredibly tasty, and I like the lighter garlic-lemon sauce better than a heavy one.

  • This is going on our menu for next week…it looks absolutely delicious, and perfect for a spring-time meal.

  • This looks delicious. Thank you for these posts. I just started a new job and expecting a new baby in August. I’m trying to get prepared now as much as I can (if it is possible to prepare for these things). My list includes finding quick and easy recipes with little clean up. I will be trying this!

  • this looks really good. I love fish dishes and this one looks real easy as well. Don’t worry it will get easier with your baby…..they eventually grow up…..LOL!!! And then they become loud mouth teenagers…HAHA!!! Great blog. Gonna bookmark you.

This recipes was FANTASTIC! I had a little grouper left in my freezer from a fish taco party I hosted a couple weeks ago, and was out of idea on what to do with it. I substituted the basil for spinach, and added a little red onion and habanero, as i had this in my fridge and wanted to get rid of it. I just discovered this site and am extremely excited about it.

This was wonderful! My husband is not a fan of fish but I try to make us eat it once a week since it is good for us. I made this with tilapia. Even my husband said it was good and that never happens when I make fish. Thanks for such a great recipe.

I just made it and it was great! I would have paid $35 for it at a restaurant.
