When I look at The Four Year Old and tell her that we’re having salmon for dinner, she gets this hopeful look on her face and asks: Cooked salmon?
The disappointment is instantaneous when I tell her yes, I will in fact be cooking the salmon first. I was 22 when I had sushi for the first time. Landry? Wielding chopsticks since around 2.
When April’s HEB Primo Picks arrived, I made a beeline for the Roasted Red Pepper Tapenade, a flavorful sauce studded with chunks of red peppers. I knew exactly what I was going to do with it: pour it into a small ramekin, top with a some goat cheese rounds, pop it into the oven until it was bubbly perfection, and call it mine.
(Disclosure: I also made a beeline for the Multigrain Smoked Gouda Chips. Total domination. Those guys didn’t stand a smokey, crunchy chance against me and that bowl of Strawberry Salsa.)
Instead, I opted to share. A cold slab of salmon and crumbly, tangy goat cheese were calling. A 7-minute trip through the broiler was all it took to transform 3 ingredients into a fabulous main dish.
It’s hard for even The Four Year Old to be disappointed in dinner when it’s that delicious.

Salmon With Roasted Red Pepper Tapenade & Goat Cheese
Broiled salmon topped with red pepper tapenade and tangy goat cheese - dinner is on the table in 15 minutes.
Ingredients
- 4 6-oz salmon filets
- Olive oil
- Salt
- Pepper
- HEB Red Pepper Tapenade
- Crumbled goat cheese
Instructions
- Preheat broiler and line a pan with foil.
- Lightly spray/drizzle olive oil onto the foil.
- Place the salmon filets on the pan and season with salt and pepper.
- Lightly spray/drizzle with olive oil.
- Broil for 5-6 minutes.
- Top each filet with a generous spoonful of tapenade and some goat cheese.
- Return to broiler for 1-2 minutes, until cheese begins to brown.

I agree with you, how do I jus choose one? I love salmon sashimi, mustard curry salmon, blackened salmon, tandoori salmon, teriyaki salmon. all the salmon!
I’m 38 weeks pregnant, so since I haven’t been able to have it in FOREVER, I’m going to say sushi. 🙂

Ducking head…I don’t have one! I’ve tried and tried, but so far no real love. Smoked is the most palatable to me, even thought I’ve had fresh caught, the recipe all salmon haters love, etc. I just can’t get my taste buds around it. But I do love Amazon cards 🙂

I like it poached in parchment, wrapped up with coconut milk, lemon grass, shallots and a little honey.

My favorite way to make salmon has to be blackened. It’s enough of a strong fish to withstand the hevy spices and works perfectly with my smoked paprika!

My fave way to prepare salmon (other than sushi, which I never prep myself…) is a black pepper/brown sugar rub. Let it sit for 15-20 mins before tossing on a hot grill!

Well, this is embarrassing, but the only way I’ve ever “cooked” with salmon was using salmon in a can. (I know!!) Last summer our neighbor gave us a jar of home-canned salmon made with freshly caught Alaska salmon. It’s still in the refrigerator because I’m not sure how to prepare it. Your recipe looks delicious–and easy! Might be a good place to start. Thank you.

I’ve pretty much only had salmon two ways: sushi and with some type of Asian-inspired sauce. This version looks so good, though, and that goat cheese and red pepper combo is calling my name. Salmon with dill, salt, pepper, lemon slices and a drizzle of olive oil. Bake at 350 for about 20 minutes. Simple, but totally delish recipe!

I tend to go basic for salmon because fresh salmon is wonderful on its own. Just salt the fish overnight, pan fry till the skin is crisp and meat is nicely browned. Squeeze a little lemon before serving. Yum….
