Balsamic Nectarines & Spinach Salad

Lunch at home alone is always uneventful. I typically sneak downstairs for a quick bite of leftovers and then spend the rest of the hour watching All My Children. What’s for lunch, who was kidnapped (and by whom), who’s going to jail – all very important questions to me at noon each weekday.

Last night’s dinner was (unfortunately) portioned perfectly – just enough food for the cooker and the eater. There was no steak leftover for a barbecue sandwich, no potatoes leftover for french fries, but there was half a nectarine.

Spinach & Nectarine Salad For One (Measurements are approximate)
1 Tbsp olive oil
1/8 cup sweet onion or shallot, chopped
1 Tbsp balsamic vinegar
1/2 Nectarine, sliced 1/4-inch thick
1 1/2 cup fresh spinach, washed and dried
1/8 cup walnuts, chopped
1/8 cup feta, crumbled

Saute onion over medium heat until soft and add vinegar, stirring well. Add nectarines and cook for 2-3 minutes, stirring occasionally. Pour nectarine mixture over spinach and toss to coat spinach. Top with walnuts and feta.

  • What a great salad! I loved the idea of using Nectarines…..I use Mandarin oranges sometimes too…makes a nice change from the usual apples and grapes stuff.

    I wouldn’t complain about not having leftovers with this salad! It looks delicious! Now I only wish I had the ingredients at home for when I take lunch!

  • My favorite salad is one that contains spinach, a fruit and cheese. You nailed all three. I hope there is some left for me.
