Happy Monday! This week, we’re giving away another of my favorite things: cute aprons.

The Foodie Groom has absolutely no use for cute aprons. And usually no opinion on whether they’re actually cute or not. And to make sure we have enough room in the kitchen drawers for things that he actually cares about, like being able to find kitchen towels, I’ve been relocating my apron collection aprons to a linen closet as they come out of the laundry.

To enter, simply leave a comment below and tell us: What’s your favorite, quick, go-to dinner in the summer?

  • Usually grilled chicken or pork served with rice, black beans and a fresh veggie such as green beans. I also keep ground turkey meat in the freezer because enchilada casserole is something I can quickly throw together.

    Breakfast for dinner! Eggs and bacon, pancakes and sausage, clean out the refrigerator omelets. Depends on what is on hand.

  • My quick dinner of choice lately has been pasta salad. Quick, cold, and yummy!

  • I love roasted veggies with pasta for an easy summer dinner.

    Quesadillas. We always have tortillas on hand, cheeses, etc. as well. I make a chunky salsa that my sister-in-law taught me to do, and we usually have some of that as well. Then we either go queso w/ salsa or add some pollo if we have some on hand already cooked & ready to go.

  • Grilled balsamic chicken and asparagus. We also like the harvest blends mix from Trader Joe’s. I love that Apron – so cute!

  • Gazpacho! It’s not only a cold soup to cool you off, but it’s always super easy. And you can use the great tomatoes which are now in season.

    Corn on the cob. I live in Amish country, PA, so there’s always someone selling corn at a roadside stand. Stop on the way home from work. Boil it up, and throw some butter on the table. Done.
    If there’s a salad, or some leftovers in the fridge, we eat that with it. If not, we just eat corn!

    I think my quick fav thing to make is a fruit salad. I always have grapes, apples, oranges, and pears in my fridge and occasionally i’ll buy a water melon. So on those days its too hot to cook i’ll chop up my melon, apples, and pluck some grapes, throw it in a bowl and stir up a quick fruit dip.

    My go to recipes in the summer always revolve around fresh farmer’s market veggies. I still like to eat warm, home cooked meals, regardless of the heat outside. I would have to say I most frequently make veggie tacos, burritos, or enchiladas. There are so many combos of veggies you can use, it’s like a different dish every time!

    Our go to dinner during the summer is normally something frozen that is easy to be reheated!

    Quick, summer, go-to dinner: mix soba noodles with any and all vegs I have (cukes, carrots, peppers, radishes, scallions, peas) and add homemade peanut sauce. Top with cilantro. Quick, delicious and my 2- and 4-year-olds love it.

    I hate to say it, but with this heat…ham sandwiches! When it’s not quite as hot, I love making a no name dish with cubed chicken, canned tomatoes (with basil and lemon pepper added), zucchini and mushrooms. I add some crushed red pepper for some kick and serve it over vermicelli. My kids love spaghetti, but I think it’s boring, so this is an easy compromise. :o)

    Asian grilled pork tenderloin and salad with homemade vinaigrette dressing. Only takes a few minutes to marinate and a few more minutes to grill and voila! Refreshing summer meal. We usually throw a few fresh veggies on the grill as well. Love the apron……one of my weaknesses!

    Whatever vegetables are hanging around from the farmer’s market and the garden: fresh corn, cucumbers, tomato, red onion. Chop ’em up, drizzle with apple cider vinegar and olive oil, throw in some fresh basil, mint, and chives from the garden, salt and pepper. Serve with bread and maybe some fresh mozzarella. Tastes like summer 🙂

  • Fresh salad components from the garden and farmer’s market. I’ve started tossing peaches or strawberries in with spinach and other lettuce I’m growing in the garden to make different salads. The fruit juices can act as enough dressing to complete salad without adding anything extra. Fresh broccoli kicks it up a notch further. Sometimes I dress the salad up with hard boiled egg or grilled chicken with different marinades to change the flavor. I’ve come to like the Hidden Valley Ranch Roasted Onion Parmesan Dressing for when I use chicken in the salad.
