Frozen Mango Margaritas

Oh, hi! And happy Monday-Before-Cinco-de-Mayo!

You’ve probably been able to infer… but I’m not really much of a frozen margarita girl, I’d much rather have my favorite cocktail poured over ice. But we love trying out new margarita flavors and there are just some fruits that just make a better frozen drink.

Like the Mango Margarita. It’s one of the very few margaritas that make a better frozen drink than an on-the-rocks cocktail.

We went through a stretch of making frozen margaritas late last summer with fruits like watermelon, cantaloupe, and juicy mango. Between the frosty glasses and the beautifully ripe summer fruits, it was exactly what the doctor ordered in the midst of the unrelenting Texas heat.

The thing to remember here: If it can be frozen it, it probably can be blended with ice, tequila, and lime 🙂

This recipe is pretty widely adaptable – the frozen mango can be swapped for frozen pineapple (if you can take it… I can’t – I’ll explain later this week) and, with a few teaks, frozen cantaloupe.

Frozen Mango Margaritas

Frozen mango chunks and homemade margarita mix make a refreshing summer cocktail.

Ingredients

  • For the homemade margarita mix:
  • 1/2 cup sugar
  • 1 cup water
  • 1 cup freshly squeezed lime juice (8-12 limes)
  • For the margarita:
  • 3 oz homemade margarita mix
  • 1 rounded cup frozen mango cubes (~1/2 inch)
  • 3 oz tequila
  • 2 oz orange liqueur
  • 2 - 2 1/2 cups crushed ice
  • Salt or sugar, for rim (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Heat water and sugar in a small sauce pan until completely dissolved and the water is clear. Let cool.
  2. Pour into a pitcher with lime juice. Homemade margarita mix done! It will keep a couple of weeks covered in the fridge and also freezes nicely into ice cube trays.
  3. To make the margarita, add margarita mix, mango cubes, tequila, orange liqueur and 2 cups ice to the blender.
  4. Blend on high, until uniformly slushy.
  5. If the mixture looks too thin, you can blend in the remaining ice.
  6. Run a lime wedge along the outer rim of your glasses and dip into salt or sugar.
  7. Pour the margarita into the glasses and drink immediately.
