One of my favorite fixin’s to serve on taco night is Pineapple Salsa. While you’re flipping through the menu at Cafe Red Onion, they bring out bowls of red salsa and pineapple salsa and a basket of tortilla chips. One bite of the pineapple salsa and I was hooked.
It’s sweet. It’s hot (or at least can be, if you get the right jalapeno). And incredibly addicting. It has almost a crushed pineapple texture so it’s perfect for dipping chips or spooning over tacos.
Fresh pineapple is a must. My first attempt to make the salsa at home with canned pineapple ended in serious disappointment many years ago. The canned stuff just doesn’t do the job in this recipe.
Pineapple Salsa
Fresh pineapple is the star in this sweet & spicy cold salsa.
Ingredients
- 2 cups chopped fresh pineapple (1/4-inch dice)
- juice of 1 lime
- 1/3 cup chopped red onion
- 1 handful cilantro, chopped
- 1 jalapeno, chopped
- Salt
Instructions
- Place all ingredients in a food processor and pulse 2 or 3 times. This will give you the crushed pineapple texture. For a chunkier salsa, stir all ingredients together and salt to taste.
- Chill in the fridge until ready to serve.
Notes
Yields: ~2 cups

Oh yum! Whole Foods has an awesome pineapple salsa that they sell from the salad bar, and I’ve always wanted to recreate it at home. this looks really similar, so I can’t wait to try it!

I think the only sweet salsa I’ve ever had is mango (which I love) but pineapples are my other favorite tropical fruit. This is a must-try for me!

This recipe looks fabulous! Mango salsa has been one of my favorite standbys for years but this looks just as good. I think grilling the pinneapple first may add even more flavor, I will have to try it both ways.

I made this tonight with my Lime Chicken Soft Tacos. It was pretty good! The only thing I think it needs is some onion. I’m not a huge raw onion fan, but I think it’s almost required in salsa. Thanks for the recipe!!
@Cheryl, Hmmm, maybe a little red onion or shallot? I’ll give that a try this weekend – I have half a pineapple left in the fridge 🙂

Do you know why Red Onion closed? I plan on making this recipe and I hope it is as good as theirs was.
We drove up to the west location one day for lunch and it was closed. Sad day, had my heart set on pineapple salsa. I know Kirby shut down, too, at some point but 290 was open last I heard.
Hate to break it to you , but, Café Red Onion uses canned pineapple , and a touch of artificial sweetener…..who cares, it is still fabulous !
