Grapefruit Meltaways

There might be no better way to cure the winter blahs than with a big bag of winter citrus. Our citrus trees are still very young but we hope to get plenty of fruit from them this year. Until then, I’m relying on low prices at the grocery store and my mom. She brought over a bag of grapefruits that she inherited from a co-worker. Big, juicy, backyard Texas grapefruits.

I love grapefruits. Sprinkled with sugar and broiled, they’re breakfast. Segmented and tossed with red onion, arugula, and olive oil, they’re lunch. Baked into buttery, citrusy cookies that melt in your mouth, they’re dessert. And breakfast 🙂

Grapefruit Meltaways

Buttery, citrusy cookies that melt in your mouth.

Ingredients

  • 3/4 cup (12 Tbsp) butter, room temp
  • 1 cup powdered sugar, divided
  • 1 Tbsp grapefruit zest
  • 2 Tbsp grapefruit juice
  • 1 Tbsp vanilla
  • 1 3/4 cup + 2 Tbsp flour
  • 2 Tbsp cornstarch
  • 1/4 tsp salt

Instructions

  1. Beat butter and 1/3 cup powdered sugar on medium, until pale and fluffy. Add zest, juice, and vanilla, and mix until fluffy.
  2. Add flour, cornstarch, and salt to the butter mixture, and mix on low speed until just combined.
  3. Divide dough in half. Place each half on a sheet of parchment paper and roll into logs that are 1 1/4 inches in diameter. Refrigerate until cold and firm, at least 1 hour.
  4. Preheat oven to 350 degrees. Remove dough from parchment and cut into 1/3-inch-thick rounds. Place on lined baking sheets 1/2-inch apart. Bake cookies until barely golden, about 12 minutes.
  5. Transfer cookies to wire racks to cool slightly, 8 to 10 minutes. While still warm, toss cookies with remaining 2/3 cup sugar in a resealable plastic bag (or use less powdered sugar by sifting it over the top of the cookies). Store in airtight containers at room temperature up to 2 weeks.

  • Grapefruits are one of the few things that really get me through the winter season. Sprinkle them with just a hint of sugar, and I’m in heaven. Although I would never turn them down in cookie form. These sound delicious!

    I made these tonight. This is the first cookie I have made without any problems. What would be the best way to make them slightly sweeter? I just am fairly new to baking and cooking and am unsure of how to adjust recipes.

  • I am so incredibly hungry right now, and those look so incredibly good. The buttery goodness of the cookie, combined with the kick of the grapefruit can only be a thing of delight! Love it.
